the first things that come to my mind are:

1) long attack time

2) evolving timbres

Also, lots of reverb and/or differently timed delays, maybe?

Currently listening to Seefeel track "Signals" with low-pass filters and massive delays on piano (I think).

A good method I've always used is to find something interesting that creates a short, but complex sound. Then stretch it to a few times its original length, some delay (as was said) and then all to a reverb send.
