sometimes i can listen to a track i've written and think it sounds too slow, sometimes i can listen to the same piece of music and think it sounds too fast or rushed in tempo.

any recommendations on reading or concepts to mull over re: the psychoacoustics of time perception?

Nice. I recognize this dilemma quite well. The 'proper' speed of playback is quite dependent of mood and current circumstances.
Fortunately, using electronic means, it's quite simple to change this variable, as long as one has saved the original material.

So, realizing this, I don't consider any work as being 'final'. But just as a version of the material of the song.

In the electronic hemisphere playback speed is just a frequency anyway.
It is possible to convert a whole song into a sound of 2 secs, and use it as a sample in another composition.

I really notice that music sounds faster first thing in the morning.

I love the music on Brass Eye when it's slowed down so that normal people can hear it. In the early nineties, when Brass Eye was made, it would have sounded like unlistenable noise. Nowadays, it's not unlike quite a lot of music posted here...
