I want to build something that requires a 12AX7 tube, could I then simply replace it with another double triode say a ECC85 or the like ? Or is there something else to it ?

12ax7 has higher gain than many dual triodes, apart from that nothing much to worry about. Many circuits you can sub in 12au7, 12at7 without other changes.
note the ecc85 has a slightly different pinout than the 12.... series.
