What module to use?

I am a music composer, and want to add strings and virtual instruments to my songs. I was recently given an M-Audio Keystation 61es. My question is this: what sound modules work best with this? I am a musician of many years experience, but with midi and virtual instruments, I am a novice. I also find that when working in my DAW, when recording one virtual instrument per track, what I record on one track will be "added" on top of whatever tracks I lay down next. Any help would be greatly appreciated.

There are loads and loads of different plugins you can use with a DAW - which works best depends on what kind of music you do and what way of working you're after. Which DAW are you using?
